Inside this Restaurant Group’s Ambitious Miami Expansion
Carbone Miami
BORN IN NEW YORK, AN INSTANT CLASSIC ON MIAMI BEACH
Carbone is the essential Miami dining experience. Charismatic service captains sporting burgundy tuxedos, an electric and extravagant atmosphere designed by Ken Fulk, and a menu of world-renowned interpretations of Italian-American cuisine by Chef Mario Carbone, come to life every night on Collins Avenue.
CLASSIC
The Carbone menu features classic Italian-American dishes prepared with only the most exceptional ingredients and fine-dining techniques. Favorites like Caesar Salad alla ZZ, Carpaccio Piemontese, Baked Clams, and Veal Parmesan reach thrilling new heights.

PATIO
Adding to this location’s elegantly tropical feel is a lush outdoor patio offering some of the most wonderful al fresco dining in the city.
The expansive patio space can seat 50 people. Its laid-back aesthetic, consisting of rattan ceiling fans, eclectic furniture, and lush greenery, nods to Havana, bringing a distinct Miami flair to the Carbone experience.
DESIGN
Renowned designer Ken Fulk brought the decadent color palette—terracotta, cream, rich emerald greens—to accent Carbone Miami’s Malachite ceiling beams and columns, damask-upholstered walls, and leather-upholstered banquettes and kitchen doors. Murano sconces and chandeliers add soft, glimmering light to the bar and dining areas, and Fulk’s hand-drawn wallpaper guilds the bathrooms.
